Ingredients:
1 egg white
1 tbsp water
1 pound (3 cups) whole almonds
1/4 cup sugar
2 tsp ground cumin
1 tsp ground coriander
2 tsp coarse salt
1 1/2 tsp ground red pepper
Directions:
1 Preheat oven to 275 degrees.
2 Line a sided sheet pan with parchment paper.
3 Whisk egg white and water together until foamy.
4 Add almonds and toss to coat.
5 Transfer almonds to sieve, toss gently and let drain.
6 Stir together sugar, cumin, coriander, salt and red pepper.
7 Add almonds and toss to coat thoroughly.
8 Spread almonds on the sheet in a single layer; bake for 30 minutes.
9 Gently stir almonds.
10 Reduce the oven temp to 200 degrees and continue to bake for another 30 minutes, until almonds are dry and nicely toasted.
11 Set aside to cool completely, about 15 minutes.
