Ingredients:

1 tbsp fat-free mayonnaise

1 tbsp fat-free sour cream

2 tsp frozen orange juice concentrate, thawed

1/4 tsp grated fresh orange peel

1 boneless, skinless chicken breast, cooked and chopped

1 large kiwi, thinly sliced

1/3 cup canned mandarin oranges, drained

1/4 cup finely chopped celery

4 lettuce leaves, washed

2 tbsp coarsely chopped cashews

 

Method:

Combine mayonnaise, sour cream, orange juice concentrate and orange peel in small bowl.

Add chicken, kiwi, oranges and celery; toss to coat.

Cover; refrigerate for 2 hours.

Serve on lettuce leaves.

Top with cashews.
